About 10 minutes · Serves 1

Broccoli egg toast

You’ll need

  • 1 slice of bread
  • 1 egg
  • ¼ avocado or a little butter
  • 1 small handful of broccoli microgreens
  • Salt and pepper, to taste

Make it

  1. Toast the bread and spread with avocado or butter.
  2. Cook the egg to your preference and place it on the toast.
  3. Top with broccoli microgreens, season, and enjoy.

About 10 minutes with a cooked potato · Serves 1

Broccoli loaded potato

You’ll need

  • 1 hot, fully cooked baked potato
  • 2 tablespoons shredded cheese
  • 1 tablespoon sour cream or plain yogurt
  • 1 handful of broccoli microgreens
  • Pepper, to taste

Make it

  1. Split the hot potato and fluff the inside with a fork.
  2. Add cheese and sour cream or yogurt.
  3. Finish with a handful of broccoli microgreens and pepper.

Sunflower turkey & avocado sandwich

You’ll need

  • 2 slices of bread
  • 2–3 slices of ready-to-eat turkey
  • ¼ avocado, sliced
  • 1 generous handful of sunflower microgreens
  • Mayonnaise or mustard, to taste

Make it

  1. Spread mayonnaise or mustard on the bread.
  2. Layer with turkey, avocado, and a generous handful of sunflower microgreens.
  3. Close the sandwich and slice. Try hummus instead of turkey for a plant-based version.

Pea Shoots recipes

Garlic pea shoots

You’ll need

  • 2 loosely packed cups of pea shoots
  • 1 teaspoon olive oil
  • 1 small garlic clove, minced
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

Make it

  1. Warm the oil in a skillet over medium heat. Add garlic and stir briefly until fragrant.
  2. Add the pea shoots and toss for 1–2 minutes, until just wilted.
  3. Remove from the heat, add lemon, and season to taste. Serve alongside noodles or spoon over toast.
